We keep hearing about matcha, and I keep creating all these recipes with matcha because I love matcha and people keep asking what the heck is matcha?
The green tea plants for matcha are shade grown for about three weeks before harvest, and then the stems, and veins are removed.
On average matcha contains less than half the amount of caffeine per cup of coffee.
Matcha green tea is steamed, stemmed, and divined right before being ground stoned into a very fine powder, then stored away from light, and oxygen to actually preserve its bright green color.
The reason why I love playing with it as a chef, is that it has such a potent color that's filled with antioxidants, and it helps fight free radicals, and it makes me feel amazing!
I don't do coffee because I'm very sensitive to caffeine, but the caffeine coming from matcha I can actually do. It's a very sustained energy and you don't get any crashes.
It's great for speeding up your metabolism, burning fat, alkalizing, and your pH balance .
What I love to do with it is just getting one of these shakers. I know we all have seen people at the gym shaking up their protein, what I do is I shake up some matcha green tea.
This is fantastic for traveling. I know when I travel I don't have access to a juicer always. I bring a shaker, and then I just bring matcha green tea powder.
About 2 tbsp works for me. You can then add some stevia, so I just put in french vanilla stevia. No sugar crashes. I'm not doing sugar. I've been on like a sugar cleanse for a while now.
I feel amazing, and it's great for my energy levels, great for my mental clarity.

You can add it into food, so I add into my desserts all the time. If you like to bake you can put it into cupcakes, you can put into cookies, you can make it into chocolate , as I've been doing chocolate-dipped strawberry matcha.
